When visiting Butcher Restaurant you are sitting nine miles from Summerhill Farm, Thomastown, where we rear our own traditional breeds including purebred Hereford, Galloway and Aberdeen Angus. These cows are born and raised at Summerhill and are grass fed for 10 months of the year. Your host, Mark Williams is a 6th generation beef farmer at Summerhill Farm. Mark has been supplying beef to top restaurants around Ireland since the 1990's which is how he met our Head Chef James Dewberry and was inspired to open this restaurant, Butcher in the heart of Kilkenny.
