About Us

Our owner, Mark Williams, is a 6th generation beef farmer at Summerhill Farm. He has been supplying beef to top restaurants around Ireland since the 1990's and was inspired to open a restaurant, serving the best of Irish beef.


Butcher opened its doors in August 2018 and since then has become the home of delicious steaks and comfort food, as well as a range of carefully selected cocktails. 


It is located in the historical Butterslip lane in the heart of Kilkenny City, overlooking busy shoppers on St. Kieran’ street.


Awarded the Best Newcomer 2019 Irish Restaurant Award as well as Yes Chef Newcomer of the Year 2020, Butcher is also the home of the Most Creative Burger Build 2019.

Stepping into the Butcher you're welcomed by its carefully chosen design combining industrial elements yet with an inviting feel.


Its style is inspired by an Abattoir, with traditional meat factory elements, while our red neons create a warm and modern atmosphere. It is the perfect location for both young and mature diners. 

Our meat

We are proud to serve the best of Irish Beef. Our meat is sourced from trusted local producers ensuring the best quality. Our steaks are predominantly Hereford and Aberdeen Angus, known for their tenderness and marbling as well as unique taste.
